How many nights are just so busy that you wish you just had a list of quick and easy dinner recipes to fall back on? Too often I think we’re all a little guilty of opening the Uber Eats app because we have no clue what we can cook that is quick, easy, and will still taste bomb,
However, I think we can all agree that the cost of doing this really ADDS up. One of my favorite things to do each week (usually on Sunday) is to use this Free Weekly Meal Planner to plan out the week’s dinners. Then, I log into Amazon Fresh and place my order and in a few hours, the groceries are on my doorstep.

1. Sun-Dried Tomato Pasta with Spinach
If you love pasta and are determined to find more easy dinner recipes, look no further. This dish is amazing, especially if you’re a huge fan of sundried tomatoes like myself.
Something I’ve learned when it comes to pasta is the cooler the noodle the more fun it is to eat! LOL ok now I sound like I’m 5 but hey, it’s kind of true!

Not only does this save my sanity, but it makes it so easy to know what to pull out of the freezer each morning. Also, this has helped us a lot with reducing waste and letting food in the fridge go bad.

2. Turkey Taco Stuffed Sweet Potatoes
These are super simple and incredibly delicious. Also, if just the entree’s in this post aren’t enough food for you, you can always add veggies on the side and even potatoes if you aren’t afraid of carbs.
My favorite way to roast veggies and potatoes is to simply put wash them, chop em up, drizzle olive oil on a cookie sheet, lay the veggies, sprinkle fresh ground pepper and garlic salt, and roast em on 400F for 15-20 minutes or until they’re done. DE-LISH!
3. Honey Garlic Shrimp
This recipe makes me drool just thinking about it. Can you really ever go wrong with shrimp? Ok, I guess maybe if you’re allergic…
What I love about shrimp is that it’s super easy to cook, and always tastes amazing. Just don’t overcook it! Otherwise, it WILL taste like rubber!
4. Sheet Pan Fajitas
Sheet Pan Fajitas? Talk about some bomb, easy dinner recipes! This one is on the top of my favorites list for sure. Literally so easy and always on point.
To make this healthier, you can always ditch the tortillas and eat it in as a fajita bowl over a bed of cauliflower rice! PS. Don’t forget about my all time favorite healthy hack – substituting greek yogurt for sour cream!

5. Green Goddess Grilled Cheese
We’ve made this so many times and it honestly never gets old. It’s like a ~healthy~ grilled cheese. Well, healthy because there are spinach and avocado. You even add some tomatoes or chicken if you want. This recipe is super good and incredibly easy! It’s a great way to have comfort food like a grilled cheese but still incorporate some greens as well!
6. Chicken Tostadas
Tostadas are honestly my biggest go-to out of all of the easy dinner recipes out there. This one might take the prize for me. If you keep some tostada shells on hand, the chicken and beans can be made super quick and the rest is just adding toppings. This is a super easy and definitely tasty option!

7. Spicy Thai Noodles
I’m all for a little asian zing when it comes to dinner ideas. This Spicy Thai Noodles recipe definitely has a bit of a kick to it, but man is it delicious! Sometimes asian can be tricky with the different sauces and spices, but if you’re in for it and really craving asian, this ones for you!
8. Chicken Tacos
Just like the tostadas recipe, chicken tacos is another one of my favorite easy dinner recipes. It’s always so good, and super easy to make. Again, if you want to make it healthier, ditch the tortillas, and eat it as a burrito bowl over a bed of cauliflower rice! Oh so tasty!
9. Chicken Stiry Fry
You really can make a stir fry out of anything and everything. It’s usually my go-to if I have a bunch of random veggies that would taste good in a stir fry. I throw em all together and cook em up. The biggest key is the sauce. You need a good sauce in order to make a stir fry taste good. Also, pro-tip, make any stir fry boujee and fancy by sprinkling green onions and sesame seeds on top. Adds a finished vibe and looks so profesh!
10. Chickpea Tacos
This Chickpea Tacos recipe is one of my favorite recipes and it is SO DANG EASY! This is a great meatless option as well. We love to eat it on corn tortillas with literally just the chickpeas, guac, and tortillas. We usually always roast a veggie on the side. Kind of random, but hey, gotta get your veggies in!
